
Pear Fizz Cocktail
The frothy egg white top on this bubbly cocktail comes from a vigorous shake in a cocktail shaker, along with a splash of club soda.
Ingredients
- 2 oz. pear brandy
- 1/2 oz. pear juice
- 1/2 oz. lemon juice
- 3/4 oz. simple syrup
- 1 egg white
- Soda water
Instructions
- Combine all ingredients except the soda water in a cocktail shaker. Add ice and shake for 15-20 seconds.
- Strain out the ice, then shake the contents again for about 30 seconds.
- Pour the contents into a highball glass, and let the drink settle for 1 minute, until a layer of foam separates from the liquid. Slowly pour the soda water down the side of a straw into the glass, so that the foam slowly rises to the top. Pour until the glass is full and the foam has risen slightly above the rim of the glass.
