Ingredients
  

For dosa batter 

  • Spinach leaves (पालक) – 1 large bunch 
  • Green moong dal, Whole (मूँग दाल साबुत) – 1 cup
  • Raw Rice (चावल) – ½ cup 
  • Curry leaves (कड़ी पत्ता) – few sprigs
  • Ginger chopped (अदरक) – 1 tbsp
  • Green Chilli (हरी मिर्च) – 2 nos
  • Cumin (जीरा) – 2 tsp
  • Peppercorn (काली मिर्च) – 2 tsp
  • Onion chopped (प्याज़) – ¼ cup
  • Water (पानी) – 1 cup + 1 cup
  • Salt (नमक) – to taste
  • Oil (तेल) – to drizzle

Note – 1 bunch of spinach leaves after blanching should fill a ½ cup.

For Paneer Filling

  • Oil (तेल) – 3 tbsp
  • Dry red chilli (सूखी मिर्च) – 2 nos
  • Mustard seeds (सरसों दाना) – 1 tsp 
  • Urad dal (उरद दाल)  – 2 tsp
  • Curry leaf (कड़ी पत्ता) – a sprig
  • Onion chopped (प्याज़) – ¼ cup
  • Green chilli chopped (हरी मिर्च) – 1 no
  • Ginger chopped (अदरक) – 2 tsp
  • Paneer mashed (पनीर) – 200 gms
  • Salt (नमक) – to taste

For Onion Tomato Chutney 

  • Oil (तेल) – 5 tbsp
  • Heeng (हींग) – ½ tsp
  • Dry red chilli (सूखी मिर्च) – 2 nos
  • Mustard Seeds (सरसों दाना) – 2 tsp
  • Urad dal (उरद दाल) – 1 tbsp
  • Cumin (जीरा) – 2 tsp
  • Ginger (अदरक) – a small piece
  • Garlic cloves (लहसुन) – 10 nos
  • Green chilli (हरी मिर्च) – 1 no
  • Curry leaves (कड़ी पत्ता)  – handful
  • Onion, roughly cut (प्याज़) – 1 cup
  • Tomato, roughly cut (टमाटर) – 2 cups
  • Salt (नमक) – to taste
  • Tamarind pulp, thick (इमली) – 1 tbsp

Instructions
 

For Dosa

  • First of all, blanch the spinach leaves in hot water and then put the blanched spinach in cold water. Now, for dosa batter, Soak green moong dal and raw rice for at least 2 hours. In a mixer grinder jar, add the soaked moong dal and rice after draining them, then add the blanched spinach, curry leaves, ginger, green chillies, cumin, black pepper, and onion and grind it to a smooth paste.
    Add water accordingly to the batter while grinding to adjust the thickness. For the filling, in a pan, add oil, dried green chillies, mustard seeds, urad dal and curry leaves, then lower the flame and add onions.
    Now add mashed paneer and salt. On a hot tawa, spread the dosa batter in circular motion, drizzle some oil and when the dosa is cooked, place the filling on top of it and fold it into half. Serve palak paneer dosa hot and enjoy!

For Chutney

  • In a hot pan, add some oil, Heeng, dried red chillies, mustard seeds, urad dal, and cumin. Now add ginger, garlic, green chillies, curry leaves, onions and cook them for 2 minutes.
    Now add tomatoes, tamarind paste and salt and cook for another 6 to 7 minutes. The tomatoes are cooked well, grind it to a fine paste. Chutney is ready. Enjoy with dosas, idlis, uttapam and many more.
