Oven-Baked Salmon

This sheet pan salmon is one of the most versatile main dishes I’ve ever created, making it a weeknight staple I turn to time and time again. While there’s no shortage of creative salmon recipes, this classic and straightforward version remains a favorite. Whether I need an effortless way to feed a crowd or a simple, hands-off meal, this is my go-to recipe that never disappoints.

Ingredients
  

  • 2 lemons, thinly sliced
  • 1 large skin-on salmon fillet (about 3 lb.)
  • Kosher salt
  • Freshly ground black pepper
  • 2 cloves garlic, finely chopped
  • 6 Tbsp. unsalted butter, melted
  • 2 Tbsp. honey
  • 1 tsp. chopped fresh thyme leaves
  • 1 tsp. dried oregano
  • Chopped fresh parsley, for serving

Instructions
 

  • Preheat oven to 350°. Line a large, rimmed baking sheet with foil, then line foil with parchment to prevent any interaction of lemon slices with foil. In center of parchment, arrange lemon slices in an even layer.
  • Season salmon with salt and pepper and place on top of lemon slices.
  • In a small bowl, whisk garlic, butter, honey, thyme, and oregano until combined. Pour over salmon, then fold up parchment and foil around salmon.
  • Bake salmon until opaque, cooked through, and flesh easily flakes with a fork, about 25 minutes.
  • Heat broiler. Broil salmon, watching closely, until browned in spots, 4 to 6 minutes.
  • Transfer lemons and salmon to a platter. Top with parsley.

What To Serve with Oven-Roasted Salmon

  • Herb Roasted Potatoes: You’ll most likely have some sauce left on the sheet tray, and these potatoes are one of the greatest things to make to soak it all up. Plus, it’s a way to utilize any extra herbs.
  • Chili Oil Smashed Potatoes: Same goes for these potatoes, but these pack some heat and of course are fun to serve smashed.
  • Bok Choy: Beautiful baby Bok choy is seared and steamed for one of the simplest sides ever. Some greens to go along with roasted salmon are one of the best ways to complete the meal.
  • Air Fryer Green Beans: Feel like using your air fryer while the salmon roasts? It takes just about 10 minutes for these beans to bring out their color and achieve that ideal fork-tender texture.
  • Roasted Broccolini: Another gorgeous-looking side of greens that would really put your weeknight dinner over the top.

Storage

  • I highly suggest enjoying this the night of for peak flavor, but if you happen to have any leftover salmon, let it cool completely, then transfer to an airtight container. Refrigerate for up to 3 days.
