Ingredients
Onion Bhajia
- Onion, medium (प्याज़) – 6-7 nos
- Salt (नमक) – 1 tsp
- Ajwain (अजवाइन) – a generous pinch
- Ginger chopped (अदरक) – 2 tsp
- Green chillies chopped (हरी मिर्च) – 2 nos
- Chilli powder (मिर्ची पाउडर) – 1 tsp
- Turmeric (हल्दी) – ¼ tsp
- Coriander chopped (धनिया) – handful
- Besan (बेसन) – 1 cup
- Oil (तेल) – for frying
For Chutney
- Green Capsicum (शिमला मिर्च) – 1 no
- Green chillies (हरी मिर्च) – 3-4 nos
- Oil (तेल) – a dash
- Mint leaves (पुदीना) – 1 cup
- Coriander leaves (धनिया) – 1 cup
- Ginger, 1” piece (अदरक) – 1 no
- Garlic cloves (लहसुन) – 3-4 nos
- Lemon, small (निम्बू) – 2 nos
- Chaat masala (चाट मसाला) – 1 tbsp
- Black salt (काला नमक) – ½ tsp
- Bhuna jeera (भुना जीरा) – 1½ tsp
- Salt (नमक) – to taste
- Hung Curd (गाड़ी दही) – 2 tbsp
- Iced water (बर्फ़ का पानी) – a dash
Instructions
- For Bhajia, slice the onions, and add them into a bowl, then sprinkle salt, ajwain, ginger chopped, green chillies chopped, red chillies powder, turmeric powder, chopped coriander leaves and mix them well with your hands. Now add besan and mix it again. Wait for 5 minutes then mix & squeeze it well with your hands.
- Keep it aside for 10 minutes. Now, take a small amount of onion with the batter, and then fry it on low flame. Take it out when its half done. Then fry it again completely, this will make the bhajia crispy.
- For chutney, grill capsicum and green chillies on open fire then put in a ball and cover it with a lid for 5 minutes then remove the skin using wet hands.Now, remove the seeds of capsicum then roughly cut it, then add it to the mixer grinder jar along with green chillies, mint leaves, coriander leaves, ginger, garlic, lemon juice, chaat masala, black salt, roasted cumin powder salt, hung curd, and chilled water. Then grind it to a fine paste.
- For bhajia pav, slit the pav into half, but not completely. Fill the chutney in it, then insert a bhajiya in it, serve it hot and enjoy it!
