Ingredients
Dry Ingredients
- Saffola Oats (ओट्स) – 2 cup
- Cocoa Powder (कोको पाउडर) – 4 tbsp
- Clove Powder (लौंग पाउडर) – ¼ tsp
- Cinnamon Powder (दालचीनी पाउडर) – ½ tsp
- Nutmeg Powder (जायफल पाउडर) – ¼ tsp
- Ginger Powder (सूखी अदरक पाउडर) – ¾ tbsp
- Baking Powder (बैकिंग पाउडर) – 2 tsp
Wet Ingredients
- Milk, room temp (दूध) – ½ cup/ 120 ml
- Butter, melted (मक्खन) – 4 tbsp/ 60 gms
- Curd (दही) – ½ cup/ 125 gms
- Vanilla Extract (वैनिला) – 1 tsp
- Saffola Honey Activ (शहद) – 8 tbsp
For Soaking
- Cashew Nuts (काजू) – ⅓ cup
- Almonds (बादाम) – ⅓ cup
- Pista (पिस्ता) – ⅓ cup
- Raisins (किशमिश) – ⅓ cup
- Chocolate Chips (चॉकलेट चिप्स) – ⅓ cup
- Dried Cherries (सूखी चेरी) – handful
- Dried Cranberries (सूखी क्रैनबेरी) – handful
- Dried Blueberries (सूखी ब्लूबेरी) – handful
- Fresh Orange Juice (संतरे का रस) – 1 cup
Instructions
- In a large mixing bowl, combine oats flour, cocoa powder, baking powder, baking soda, clove powder, cinnamon powder, nutmeg powder, and ginger powder. In a separate bowl, whisk together curd, honey, melted butter, milk, and vanilla extract until well combined.In a separate bowl, combine crushed cashew nuts, almonds, pistachios, chocolate chips, raisins, candied fruits, dried blueberries, and dried cranberries. Pour orange juice over the mixture and let it soak overnight.
- Add the soaked fruits to the dry ingredients and mix them gently. Gradually add the wet ingredients to the dry ingredients, stirring continuously to form a smooth batter.Grease and line a cake tin with parchment paper. Pour the batter into the prepared tin and spread it evenly. Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely. Decorate it with some icing sugar, cut a slice and enjoy.
