Ingredients
  

For Plain Mayonnaise

  • Cashew (काजू) – 45 nos (70 gms)
  • Paneer (पनीर) – 150 gms
  • Peppercorn (काली मिर्च) – 7-10 nos
  • Salt (नमक) – to taste
  • Milk (दूध) – ¾ cup (175ml)
  • Lemon, small (नींबू) – 1 nos

Herb Mayonnaise 

  • Cashew (काजू) – 45 nos (70 gms)
  • Paneer (पनीर) – 150 gms
  • Peppercorn (काली मिर्च) – 7-10 nos
  • Salt (नमक) – to taste
  • Milk (दूध) – ¾ cup (175ml)
  • Lemon, small (नींबू) – 1 nos
  • Mint leaves – 1 cup
  • Coriander leaves, roughly cut – 1 cup 

For Chilli Garlic Mayo

  • Cashew (काजू) – 45 nos (70 gms)
  • Paneer (पनीर) – 150 gms
  • Peppercorn (काली मिर्च) – 7-10 nos
  • Salt (नमक) – to taste
  • Milk (दूध) – ¾ cup (175ml)
  • Lemon, small (नींबू) – 1 nos
  • Chilli flakes (कुट्टी मिर्च) – 2 tsp 
  • Garlic cloves (लहसुन) – 1 no
  • Kashmiri chilli powder (कश्मीरी मिर्च पाउडर) – 1½ tsp 

For Tandoori Mayo 

  • Paneer (पनीर) – 150 gms
  • Cashew (काजू) – 45nos (70 gms)
  • Ginger garlic paste (अदरक लहसुन पेस्ट) – 1 tsp
  • Turmeric (हल्दी) – ¾ tsp 
  • Chilli powder (मिर्ची पाउडर) – 1½ tsp 
  • Salt (नमक) – to taste
  • Black Salt (काला नमक) – to taste
  • Kasoori Methi powder (कसूरी मेथी पाउडर) – ¾ tsp 
  • Milk (दूध) – ¾ cup (175ml)
  • Lemon, small (नींबू) – 1 no
  • Chaat masala (चाट मसाला) – 2 tsp

Instructions
 

  • To make a no-oil mayonnaise, start by boiling cashews for 2-3 minutes and then rinsing them in cold water. In a mixer grinder, combine paneer, boiled cashews, peppercorn, salt, and milk. Blend until smooth, adjusting the amount of milk to achieve your desired consistency. Finally, add lemon juice, adjust the seasonings, and your plain no-oil mayonnaise is ready.
  • For herb mayonnaise, blend the plain mayonnaise with fresh coriander and mint leaves until smooth.
  • For chili garlic mayonnaise, combine garlic cloves, chili flakes, Kashmiri chili powder (optional), and plain mayonnaise in a blender. Blend until smooth.
  • For tandoori mayonnaise, add ginger and garlic paste, turmeric, red chili powder, salt, black salt, Kasuri Methi powder, and plain mayonnaise to a blender. Blend until smooth and finish off with a sprinkle of chaat masala.
