Molasses Cookies
These molasses cookies are a delightful twist on traditional gingerbread cookies, surpassing them in taste and satisfaction. Bursting with flavor (don't underestimate the black pepper), these cookies offer a soft, cake-like texture that is simply irresistible. We can't get enough of them; they have truly captivated us.
Ingredients
- 2 c. all-purpose flour
- 3/4 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 tsp. ground cinnamon
- 2 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/2 tsp. freshly ground black pepper
- 1 tsp. Kosher salt
- 3/4 c. (1 1/2 sticks) butter, softened
- 1/2 c. packed brown sugar
- 1/3 c. molasses
- 1 large egg
- 1 tbsp. minced fresh ginger (optional)
- 1 tsp. pure vanilla extract
- 1/4 c. granulated sugar, for rolling
Instructions
- In a medium bowl, whisk together flour, baking soda, baking powder, spices, and salt.
- In a large bowl using a hand mixer or in the bowl of a stand mixer using a paddle attachment, beat butter and brown sugar until light and fluffy. Beat in molasses, egg, fresh ginger (if using), and vanilla until just combined. Mix in flour mixture until just combined. Cover and chill for at least 1 hour.
- Preheat oven to 375° and line 2 large baking sheets with parchment paper. Using a medium cookie scoop, portion and roll dough into 1 1/2" balls. Roll in granulated sugar and arrange onto prepared baking sheets, 2" apart.
- Bake until puffed up and golden around edges, 12 to 15 minutes.
