
Mohanthal | Besan Ki Barfi
Mohanthal and Besan Ki Barfi are traditional Indian sweets made from gram flour, ghee, and sugar, infused with aromatic cardamom and garnished with nuts. These rich and flavorful treats are popular during festivals and special occasions, offering a delightful melt-in-the-mouth experience.
Ingredients
For Rubbing
- Gram flour (बेसन) – 3 cups
- Ghee (घी) – 2 tbsp
- Milk (दूध) – 2 tbsp
For Cooking
- Ghee (घी) – ¾ cup
- Milk (दूध) – ⅓ cup
For Syrup
- Sugar (चीनी) – 1 cup
- Water (पानी) – ½ cup
- Saffron (केसर) – a pinch (optional)
- Cardamom powder (इलाइची पाउडर) – 1 tsp
For Garnish
- Pista, chopped (पिस्ता) – handful
- Almonds, chopped (बादाम) – handful
Instructions
- To make Mohan Thal, start by mixing ghee and milk into the besan until it is evenly combined. Sift this mixture to eliminate any grainy or lumpy bits.
- In a deep pan, heat some desi ghee, then add the besan mixture and cook it until the besan begins to release ghee on top and becomes liquid. Once this happens, turn off the heat and slowly add in the milk while stirring continuously to prevent it from sticking or burning. If the milk is not fully incorporated and the mixture isn't firm, turn the heat back on at low flame and continue cooking until it reaches a firm consistency.
- Next, in another pan, combine sugar, water, and saffron, cooking the syrup until it thickly coats the back of a spoon and forms a soft thread. Once done, add cardamom powder and the sugar syrup to the besan mixture, cooking until everything comes together and reaches a soft dough stage.
- Immediately transfer the mixture to a tray and allow it to set at room temperature. Your delicious and festive Mohan Thal is now ready!
