
Mix Veg Makhanwala
Mix Veg Makhanwala is a rich and creamy North Indian curry made with a medley of vegetables simmered in a luscious, buttery tomato-based gravy. Infused with aromatic spices and finished with fresh cream or butter, this dish offers a perfect balance of flavor, texture, and warmth. Often served with naan, roti, or steamed rice, it's a comforting vegetarian main course that’s both hearty and indulgent—ideal for festive meals or everyday indulgence.
Ingredients
For Curry
- Tomato, large (टमाटर) – 6 nos
- Onion, medium (प्याज़) – 1 no
- Garlic Cloves (लहसुन) – 8-10 nos
- Ginger, 1” piece (अदरक) – 1 no
- Bay Leaf (तेज पत्ता) – 2 nos
- Black Cardamom (काली ईलाइची) – 2 nos
- Cardamom (ईलाइची) – 4 nos
- Cloves (लौंग) – 3 nos
- Kashmiri Chilli Powder (कश्मीरी मिर्च पाउडर) – 1 tbsp
- Cinnamon, ½” piece (दालचीनी) – 2 nos
- Salt (नमक) – ¾ tsp
- Cashew Nuts (काजू) – ¼ cup
- Green Chillies (हरि मिर्च) – 2 nos
- Water (पानी) – ¾ cup
- Butter (मखन) – 1½ tbsp
For Veggies
- Oil (तेल) – 1 tbsp
- Butter (मखन) – 2-3 tbsp
- Ginger, chopped (अदरक) – 2 tsp
- Green Chilli Slit (हरि मिर्च) – 2 nos
- Potato, diced (आलू) – ½ cup
- Carrot, sliced (गाजर) – ½ cup
- Beans, 1” pieces (बीन्स) – ½ cup
- Cauliflower florets (गोभी) – ½ cup
- Mushrooms, halved (मशरुम) – 5 nos
- Corn niblets (ताज़ा मक्का) – ⅓ cup
- Salt (नमक) – to taste
- Broccoli, florets (ब्रोकोली) – ½ cup
- Water (पानी) – ¾ cup
- Spinach Leaves, chopped (पालक) – 2 cups
- Green peas, boiled (हरा मटर) – ⅓ cup
- Kasoori Methi Whole (कसूरी मेथी) – large pinch
- Salt (नमक) – to taste
- Sugar (चीनी) – a pinch
- Water (पानी) – a dash
- Paneer cubes (पनीर) – handful
- Cashew Nuts (काजू) – handful
- Capsicum, diced (शिमला मिर्च) – ½ cup
- Fresh Cream (ताज़ी क्रीम) – 2 tbsp
Instructions
- For Mix veg Makhanwala, roughly cut the tomatoes and drop them in a hot pan. Add onion, garlic cloves, ginger, bay leaf, black cardamom, cardamom, cloves, kashmiri red chilli powder, cinnamon, salt and cashews. Cashews will give the curry its thickness and creaminess. You can add peanuts or melon seeds instead. Add green chillies, Pour some water and drop butter. Close the lid and cook for at least 30 minutes.Let it cool down and remove the bay leaf, and cinnamon from the pan. Grind it into a smooth paste.
- For the veggies, cut them all appropriately. The size of the veggies should be small and bitesized. In a hot pan, melt some butter, then add ginger. Drop in potatoes and cook it for a while. Then add carrots and beans. Roast them for a while. Add cauliflower florets, mushrooms and corn. Toss them, close the lid and cook them for 2 to 3 minutes. Now add broccoli.Let’s add the ground curry to the veggies. Strain the ground paste and add them. Drizzle some water to set the consistency. Roughly chop some spinach and add them along with green peas, kasoori methi, salt and a pinch of sugar.
- Drop in some diced paneer and cashews. The veggies and cooked well and the texture are also rich and creamy. Add capsicum and some cream. Mix it well and our Mix Veg Makhanwala is ready to be served.
