Microwave Christmas Coconut Fudge
Microwave Christmas coconut fudge is a quick and easy festive treat. This rich, creamy fudge combines the tropical flavor of coconut with a holiday twist, making it perfect for gifting or enjoying with family and friends.
Ingredients
- 2 x 320g cans sweetened condensed coconut milk
- 150g butter, chopped
- 110g (1/2 cup) caster sugar
- 2 tbsp glucose syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 180g white chocolate, finely chopped
- 20g (1/3 cup) flaked coconut, toasted
- 1 tsp silver cachous
Instructions
- Grease an 18 x 28cm slice pan and line the base and sides with baking paper, allowing the edges to overhang.
- Place the condensed milk, butter, sugar, syrup, vanilla and salt in a large microwave-safe bowl. Microwave on High, stirring every 2 minutes, for 14 minutes or until the mixture thickens slightly.
Notes
- Stack fudge squares on a plate, wrap with cellophane and tie on a ribbon to give as a gift, or eat it straight from the tray!
