Ingredients
  

  • Basmati rice – 250 gms
  • oil – 100 ml
  • Bayleaf – 2 nos
  • Cinnamon – 2 nos
  • Ginger paste – 50 gms
  • Turmeric – 2 tsp
  • Coriander powder -1 1/2 tbsp
  • Salt – to taste
  • Tomatoes – 1/2 cup
  • Mint leaves – 1/2 cup
  • Salt – to taste
  • Jeera – 1 tbsp
  • Cloves – 6 nos
  • Peppercorn – 10 nos
  • Garlic pastes -50 gms
  • Red chilli powder – 1 tbsp
  • Green chilli – 2 nos
  • Onions large – 1/2 cup
  • Baingan medium – 1 nos
  • Coriander leaves – 2 tbsp

Instructions
 

  • Wash and soak the rice. Heat oil and add whole spices, when they crackle add onions. Saute and add ginger and garlic paste. Saute and add slit green chilli, turmeric, red chilli powder and coriander powder. Add diced baingan saute and add chopped tomatoes. Sprinkle some salt.
  • Add water sufficient for the rice. Bring to a boil and add the rice. Add mint and coriander leaves. Cook covered till all the water is absorbed. Serve hot.
