Lauki Ki Barfi

Lauki Ki Barfi is a traditional Indian sweet made from grated bottle gourd (lauki), milk, sugar, and ghee. The lauki is sautéed and cooked down in milk until soft and thick, then sweetened and flavored with cardamom and dry fruits. The mixture is set into a tray, cooled, and cut into squares. This mildly sweet, soft, and fudgy dessert is perfect for festivals or fasting (vrat) days.

Ingredients
  

  • 2lt Milk (full fat)
  • 2kg Lauki (bottle gourd)
  • 500gms Sugar
  • ½ tsp Cardamom powder
  • 2tbsp Desi Ghee
  • a pinch Green Food Colour
  • handful Cashewnuts Chopped
  • handful Almonds (Chopped)
  • handful Pistachio Chopped

Instructions
 

  • Peel and grate the lauki (bottle gourd) on from the thicker end of the grater. Make sure you peel and keep the lauki in chilled water and also grate it directly into chilled water. This way it won’t turn brown. 2kg of lauki after peeling and grating should give you approximately 1100 grams of grated lauki or 6cups.
  • Pour milk into a pan and bring it to a boil. Add the grated lauki(bottle gourd) to it. Cook them together on high heat till milk reduces to ¼th.
  • At this stage add sugar, cardamom powder and edible green food colour. Keep cooking till all of the liquid is absorbed and the lauki comes together. Lightly grease a pan about 12” long, 6” wide and 1”in height, with the ghee on all sides.
  • Remove the lauki barfi from the heat and pour into the mould. Spread and press it down together. Sprinkle with chopped dried nuts. Let it cool completely and then refrigerate it for at least an hour. Cut it into squares, remove and serve it on to a platter.

Notes

  • Tip – Keep the lauki refrigerated for few hours and then use it, this way it won’t oxidise and turn brown immediately upon grating.
