
Kadhai Paneer
Kadhai Paneer is a popular North Indian dish made with paneer (Indian cottage cheese), bell peppers, onions, and tomatoes, cooked in a spicy and aromatic blend of freshly ground Kadhai masala. Known for its bold flavors and vibrant colors, this semi-dry curry is typically served with naan, roti, or paratha. The dish gets its name from the traditional Indian wok, called kadhai, in which it's cooked.
Ingredients
For Wet Kadai Masala
For Finishing
- 2tbsp Oil
- 2 tbsp Butter
- 2tsp Red chilli flakes
- (cracked) – 1tsp Peppercorn
- (cracked) – 2tbsp Coriander seeds
- (cracked) – 2tsp Cumin
- 1tsp Green chilli chopped
- 1 tsp Garlic chopped
- 1 tsp Ginger chopped
- handful Green Capsicum Chopped
- handful Red Capsicum Chopped
- handful Yellow Capsicum Chopped
- ½ cup Onion small diced
- ½ cup Tomato chopped
- to taste Salt
- 1cup Water
- 3cups Paneer Cubes
- ½ tsp Kasoori Methi powder
- handful Coriander chopped
- (optional) – ¼ cup Cream
Instructions
For wet masala
- Heat a pan and add oil and butter. Add onions and cook them on even heat till they start to brown. At this stage add chopped chillies, ginger and garlic. Stir and cook them for 2mins. Lower the heat and sprinkle chilli powder, turmeric, coriander, cumin powder and salt. Give a quick stir and add chopped tomatoes & fresh tomato puree.
- Cook for 12-15mins or till the oil oozes out of the masala. Remove this we masala from heat and keep aside.
For finishing Kadhai Paneer
- In a fresh pan add oil and butter and sprinkle chilli, peppercorn, coriander and cumin seeds. Give a quick stir and add in green chillies, garlic and ginger. Cook for a minute and add in the capsicum, onion and tomato dices. Sprinkle some salt and toss them for a minute on high heat. Add the wet masala and toss together, add some water, paneer cubes, Kasoori Methi powder and cook them together till the masala comes together into a thick coating consistency.
- Turn off the heat, sprinkle coriander and pour cream. Mix them together and server it hot.
