Instant Pot Quinoa Dal Khichdi
Instant Pot Quinoa Dal Khichdi is a nourishing, easily digestible, and wholesome one-pot comfort meal. It involves pressure cooking quinoa, moong dal, and rice with an assortment of vegetables and a blend of spices. Whether referred to as Masala Khichdi, Vaghareli Khichdi, Vegetable Khichdi, or Dal Khichdi, this recipe is a light and nutritious option that is gentle on the stomach.
Ingredients
- ½ cup – Quinoa
- ½ Cup – Rice See notes
- ½ cup – Moong Dal See notes
Vegetables
- 1 cup – Zucchini chopped (you may use Dudhi/opo/lauki too)
- ¾ cup – carrots chopped
- 1 cup – chopped potatoes
- ¾ cup – Chopped capsicum
- ½ cup – Green peas Matar
Other ingredients
- ¾ cup – onion chopped
- 1 teaspoon – ginger paste
- 1 teaspoon – green chili paste use according to your spice level
- 1 teaspoon – Grated garlic
- Salt to taste
- 1 teaspoon – turmeric powder
- 2 tablespoon – Ghee or oil
- 1 tablespoon – cumin seeds
- 4 – cloves
- 1 inch – Cinnamon stick
- 4.5 cup – water
Instructions
Instant Pot Quinoa Dal Khichdi
- Wash Quinoa, rice and lentil couple of times with water and drain all the water. keep it aside.
- Turn on instant pot on normal saute mode.
- Heat ghee or oil. Add cumin seeds, cloves, and cinnamon stick.
- Let the cumin seeds splutter.
- Now add ginger, garlic, chili, and onions. Saute for a minute, stirring continuously.
- Add vegetables, washed quinoa-rice-lentil, water, salt, and turmeric. Mix all ingredients very well.
- Cover your instant pot with locking lid. Turn off the instant pot.
- Press the manual button and set the instant pot for 7 minutes under high pressure, vent on sealing position.
- Let the pressure release naturally.
- Open the IP lid. Instant Pot Quinoa Dal Khichdi is ready.
- Serve it with Papad, Onion, Curd/yogurt, and pickle.
Quinoa Dal Khichdi in the traditional pressure cooker –
- For this method, you will require 1 cup more water.
- Wash Quinoa, rice and lentil couple of times with water and drain all the water. keep it aside.
- Turn on a stove.
- Heat ghee or oil in traditional pressure cooker. Add cumin seeds, cloves, and cinnamon stick.
- Let the cumin seeds splutter.
- Now add ginger, garlic, chili, and onions. Saute for a minute, stirring continuously.
- Add vegetables, washed quinoa-rice-lentil, water, salt, and turmeric. Mix all ingredients very well.
- Cover your pressure cooker with locking lid.
- take 4 whistles.
- Let the pressure release naturally.
- Open the lid. Mix well. Quinoa Dal Khichdi is ready.
- Serve it with Papad, Onion, Curd/yogurt, and pickle. Enjoy!
Quinoa Dal Khichdi in a Pot –
- You will require some more water for this method.
- Wash Quinoa, rice and lentil couple of times with water and drain all the water. keep it aside.
- Turn on the stove.
- Heat ghee or oil in a big pan or pot. Add cumin seeds, cloves, and cinnamon stick.
- Let the cumin seeds splutter.
- Now add ginger, garlic, chili, and onions. Saute for a minute, stirring continuously.
- Add vegetables, washed quinoa-rice-lentil, water, salt, and turmeric. Mix all ingredients very well.
- Cover it with lid.
- Let it cook for 15 to 18 minutes over medium heat, stirring occasionally. add water in between if needed.
- Once the khichdi is properly cooked, switch off the flame and let it cover for 5 minutes.
- Open the lid. Mix very well. Quinoa Dal Khichdi is ready.
- Serve it with Papad, Onion, Curd/yogurt, and pickle. Enjoy!
