Ingredients
  

  • Cooking spray
  • 1 large egg white
  • 1/4 cup pure honey
  • 1 1/2 tsp. chopped fresh rosemary
  • 1 tsp. chopped fresh thyme
  • 1 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper
  • Kosher salt and freshly ground black pepper
  • 3 cups raw unsalted cashews
  • 2 tsp. granulated sugar

Instructions
 

  • Preheat oven to 350°F. Lightly grease a rimmed baking sheet, and line a separate baking sheet with parchment paper. Whisk egg white in bowl until frothy. Whisk in honey, rosemary, thyme, paprika, and cayenne. Season with salt and pepper. Add cashews and stir to coat. Transfer to greased baking sheet. 
  • Bake, stirring halfway through, until toasted, 12 to 15 minutes. Stir together sugar and 1 teaspoon salt in a bowl. Add warm cashews and toss to coat. Transfer to parchment-lined baking sheet and cool completely, about 1 hour.
