Greek Feta Stuffed Chicken & Salad Recipe
A flavorful Greek-inspired stuffed chicken breast filled with feta cheese, sundried tomatoes, and fresh herbs, served alongside a crisp green salad and a side of tzatziki.
Ingredients
Chicken
- black pepper (to taste)
- 2 fillet chicken breasts
- 50 grams feta cheese
- 4 sprig fresh parsley
- 1 cloves garlic
- 0.5 whole lemon
- salt (to taste)
- 3 whole sun dried tomatoes
- 0.5 tub tzatziki
- 1 tbsp olive oil
- 0.5 tsp oregano (dried)
Salad
- 30 grams black olives
- 75 grams cherry tomatoes
- 0.5 whole cucumber
- 40 grams Salad leaves
Dressing
- black pepper (to taste)
- 0.5 tsp oregano (dried)
- 2 tbsp olive oil
- salt (to taste)
- 2 grams caster sugar
- 0.75 tbsp white wine vinegar
Instructions
- zest the lemon(s), peel and crush the garlic using the garlic crusher or chop finely, wash the herbs, place the herbs, lemon zest, garlic feta cheese and sundried tomatoes into a hand liquidiser and blend, season with salt and pepper
- place the chicken breast on some cling film fold the cling film over the chicken and then using a rolling pin, bash the chicken till it is about 2 cms thick all over, place the cheesy stuffing on to the chicken, wrap into a parcel secure with wooden skewers
- heat the frying pan with a little oil, Add the chicken, to the frying pan, turn the meat till it is browned, turn the heat down to medium
- place the lid on the frying pan, Leave to cook checking occasionally and turning the chicken, cook till golden brown, cook till the juices run clear,
- make the dressing by mixing all the dressing ingredients together
- while the chicken is cooking
- wash mixed leaves and place in a serving bowl. place a cross on the top of the cucumber, then slice the cucumber to form quarters, sprinkle over the salad leaves, add the salad dressing, stir to mix the ingredients
- to serve, place the salad mixture in individual bowls
- remove the skewers, slice the chicken, lay the chicken on the top, Add the tzatzki
