
Good Housekeeping’s Famous Popovers
Popovers are light and airy pastries with a crispy exterior and a hollow center, making them a delightful addition to brunch or dinner parties. For decades, popovers have been a signature treat of Good Housekeeping, served to presidents, first ladies, royalty, and movie stars in the Good Housekeeping Dining Room. With these easy steps, you can make your own! Enjoy them fresh from the oven or prepare ahead of time and reheat at 400ºF for 15 minutes.
Ingredients
- 6 eggs
- 2 c. milk
- 6 Tbsp. butter or margarine, melted
- 2 c. all-purpose flour
- 1 tsp. salt
Instructions
- Preheat oven to 375º. Grease well with melted butter or vegetable oil 8 deep 7-ounce pottery custard cups (or 12 2 1/2 x 1 1/4-inch muffin-pan cups). Set greased custard cups on jelly-roll pan for easier handling.
- In large bowl, with mixer at low speed, beat eggs until frothy; beat in milk and melted butter until blended.
- At low speed, beat flour and salt into egg, milk and butter mixture. Or, combine all ingredients in blender; blend until smooth.
- Pour about 3/4 cup batter into each prepared custard cup (or fill muffin-pan cups half-full). Bake 50 minutes, then quickly cut a small slit in the top of each popover to let out steam; bake 10 minutes longer.
- Immediately remove popovers from cups, loosening with spatula if necessary. Serve hot with butter curls.
