
Gajar Ka Halwa | Carrot Halwa Cake
Gajar Ka Halwa is a classic North Indian dessert made from freshly grated carrots slow cooked in milk, ghee, and sugar, then garnished with cardamom and nuts. Rich, aromatic, and comforting, it’s a winter favorite often enjoyed during festivals and special occasions for its warmth and indulgent taste.
Ingredients
Gajar Halwa
- Red Carrots, grated (लाल गाजर) – 750 gms/ 15 cups
- Milk (दूध) – 500 ml/ 2 cups
- Sugar (चीनी) – 200 gms/ 1 cup
- Cardamom powder (ईलाईची) – 1 tsp
- Ghee (घी) – 3 tbsp + 1 tbsp
- Almonds, sliced (बादाम) – 3 tbsp
- Walnut, sliced (अखरोट) – 3 tbsp
- Pista, Sliced (पिस्ता) – 3 tbsp
- Khoya, optional (खोया) – ½ cup
Carrot Halwa Cake
- All Purpose Flour (मैदा) – 3 tbsp
- Sugar, powdered (चीनी) – 3 tbsp
- Milk (दूध) – 6 tbsp
- Gajar halwa (गाजर हलवा) – 2 tbsp
- Baking Powder/Eno (बेकिंग पाउडर/ईनो) – ½ tsp
Instructions
For Gajar Halwa
- For gajar ka halwa, peel the carrots first and then wash them thoroughly. Now grate them all. Boil milk in a kadhai and then add the grated carrots into it. Cook it on a low flame and keep stirring it in between. When most of the milk dries up, add sugar to it and cardamom powder. Now add some ghee in the kadhai and mix it well.
- In a small pan add some ghee and fry the dry fruits in it. Then add it into the halwa and mix it well. Gajar ka halwa is ready to be served. Enjoy!
Instant Carrot Halwa Cake
- For a quick and easy gajar ka halwa cake, take flour, powdered sugar, milk and gajar ka halwa in a mixing bowl. Mix it well then add baking powder. Now we have to line a small microwave safe mould using butter paper or parchment sheet. Pour the mixture into the mould and put it in the microwave for 75 to 90 seconds on high heat or reheat. The cake is ready. Enjoy!

Note – 1 kg carrots will give approx. 750 gms of grated carrots.
