Fluffy Vegan Pancakes

You can achieve perfectly fluffy vegan pancakes without a doubt, and you won't even miss the traditional ingredients like milk, butter, or eggs. Here are the essential components that make all the difference:
Baking Powder: The key to achieving that fluffy texture is a generous tablespoon of baking powder, lifting your short stack to new heights.
Almond Milk: We always have almond milk in our fridge, using it for both drinking and baking. However, if you prefer oat, coconut, or any other non-dairy milk, feel free to make the switch!
Coconut Oil: This serves as an excellent substitute for butter. Don't worry about the coconut flavor; it's very subtle, and some might not even notice it! The fat from coconut oil contributes to the perfect texture, tenderizing the pancakes and resulting in the best-ever taste. Additionally, coconut oil has a higher smoking point than butter, making it an ideal choice for cooking the pancakes. In other words, it won't burn in the skillet!
As for their healthiness, we wouldn't recommend consuming 10 pancakes in one sitting. However, with just a small amount of sugar and a couple tablespoons of fat, you can enjoy these guilt-free delights without any hesitation. Savor the deliciousness of these fluffy vegan pancakes guilt-free!

Ingredients
  

  • 1 c. all-purpose flour
  • 1 tbsp. granulated sugar
  • 1 tbsp. baking powder
  • 1/4 tsp. salt
  • 1 c. almond milk (or any other non-dairy milk)
  • 2 tbsp. coconut oil
  • Vegetable or coconut oil, for frying
  • Maple syrup, for serving
  • Fresh fruit, for serving (optional)

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, and salt. Add  almond milk and coconut oil and mix until smooth.
  • In a large skillet over medium low heat, heat oil. Using a 1/4 cup measure, pour batter into pan. Cook 2 to 3 minutes, and flip when you see bubbles forming around the edges of the pancakes. Cook 2 to 3 minutes more on the opposite side, until golden. (If making a large batch, preheat oven to 200° and place prepared pancakes on baking sheet in oven.)
  • When all batter has been used, serve with maple syrup and toppings of your choice.

Notes

If your coconut oil has solidified, simply heat it up briefly in the microwave to make it easier to blend into the batter!
