Festive Goat Cheese Balls
When planning this year’s holiday appetizer spread, keep it simple. This festive happy hour snack requires just four ingredients and is sure to be the first to disappear at any gathering. In this recipe, the tangy flavor of goat cheese is perfectly balanced with cream cheese, then chilled until firm for about 15 minutes. Once firm, the mixture is shaped into balls and coated with dried cranberries and finely chopped pistachios.
Ingredients
- 2 4-ounce packages goat cheese, at room temperature
- 2 oz. cream cheese, at room temperature
- 1/2 cup finely chopped dried cranberries
- 1/2 cup finely chopped pistachios
Instructions
- Mix the goat cheese and cream cheese in a bowl with a mixer until uniform in texture. Refrigerate until firm, about 15 minutes.
- Combine the cranberries and pistachios on a plate. Scoop the cheese mixture into small balls, then roll in the cranberry-pistachio mixture to coat completely. If you aren’t serving right away, place the balls on a plate, cover with plastic wrap and refrigerate.
