Fajeto / Mango Kadhi
During the summer, a staple dish in every Gujarati household is Fajeto. This renowned recipe is essentially Mango Kadhi, prepared using mango puree, chickpea flour, and a blend of spices.
Ingredients
- 1 ½ cup Curd / yogurt (Sour)
- 4 cup Water
- 2 tablespoon Besan / chickpea flour
- Salt to taste
- 1 cup Mango puree
- Pinch of Hing
- Pinch of Chili powder
- 1 inch Cinnamon sticks
- Green chili chopped
- 2 tablespoon Ghee / clarified butter
- 2 teaspoon Cumin seeds
- 2 Red dried chilies
- 1 tablespoon Jaggery Optional
- Cilantro for Garnishing
Instructions
- In a big Mixing bowl, take curd and besan. Whisk well. Add 1 cup of water and prepare lump-free mixture.
- In a pan, heat ghee. Add cinnamon, clove, red dried chilies, cumin seeds, and hing. Saute them for few seconds.
- Add prepared curd mixture. Mix well.
- Now add mango pulp, 3 cups of water and salt. Stir well.
- Let it boil for 5 minutes. Add a pinch of chili powder, green chopped chilies, and jaggery. Mix very well. Let it boil for another 10 minutes over medium heat. Add some more water if needed.
- And Fajeto is ready. That simple!! Garnish it with cilantro and serve it with hot White rice.
