El Salvadoran Marquesote Recipe
Marquesote is a traditional Salvadoran sponge cake made from eggs, sugar, flour, and a hint of cinnamon. The egg whites are whipped until stiff before incorporating the yolks and other ingredients. After a brief baking period, it’s typically served with a beverage like coffee.
Ingredients
- 1 cup Flour
- 6 Eggs (divided)
- 1 cup Sugar
- 1 Cinnamon stick
- Margarine – for greasing
Instructions
- Preheat the oven to 350 degrees.
- Grease a metal cake pan with the margarine.
- Grate the cinnamon stick enough to get 1 teaspoon full.
- Beat the egg whites into a stiff foam. This will take several minutes.
- Add the yolks one at a time, adding the next after each yolk is completely mixed in.
- Slowly add the sugar and cinnamon and beat until silky smooth
- Add the flour, mix well.
- Bake immediately, for 25 minutes or until a toothpick or knife comes out clean. Be careful not to over bake.
