
Easy Shahi Tukda
Shahi Tukda is a rich and traditional dessert made using bread simmered in thickened milk, enhanced with aromatic saffron, cardamom, and kewra essence, and topped with nuts. In this method, the bread and milk are cooked together in a single pan, allowing the flavors to meld beautifully. Once cooled and set, it can be scooped out and served directly, making it an easy and fuss-free recipe without the need to prepare rabri separately.
Ingredients
- Desi ghee – ¾ cup
- Bread Slices – 7 nos
- Milk (full fat) – 1 lit
- Khoya grated – ½ cup
- Sugar – ¾ cup
- Fennel seeds (Saunf) – 1 tbsp
- Cardamom powder – 1 tsp
- Saffron strands – few
- Pista chopped – 1tbsp
- Almonds chopped – 1 tbsp
- Kewra water – 2 tsp
- Rose water – 2 tsp
- Blue berry – handful
- Red currant – handful
- Mint sprigs – handful
- Mango diced – for garnish
Instructions
- Heat milk in a heavy bottom pan and add khoya, sugar, saunf, cardamom powder, saffron, pista, almonds, kewra and rose water. Bring to one boil and take off fire.
- Cut the bread diagonally into triangles.
- In a pan gently heat oil. Add the bread slices and on a low heat shallow fry them on both sides turning frequently. Take care not to break or burn them.
- Now increase the heat and from one side start pouring the flavoured milk into the pan. Take care as there will be a lot of steam that will rise up.
- Lower the heat and cook till all the milk is absorbed by the bread and starts to thicken. Remove from heat and garnish with fruits and mint sprigs. You can serve it cold or warm.
