Dutch Patatje Oorlog Recipe
Patatje Oorlog is a classic Dutch street food dish featuring fries, usually made from russet potatoes, topped with a mix of ingredients such as mayonnaise or mustard, chopped onions, tomato sauce, lemon, and a peanut-based satay sauce.
Ingredients
- Peanut oil – 1 tbsp
- Onion (finely chopped) – 1
- Cloves garlic (minced) – 2
- Sambal oelek – 2 tsp
- Ginger (freshly grated) – 1/2 tsp
- Peanut butter – 1/2 cup
- Chicken (broth divided) – 1 1/2 cups
- Kecap manis – 1 tbsp
- Dark brown sugar – 2 tsp
- Russet potatoes – 4
- Vegetable oil
- Salt – to taste
- Mayonnaise – 3/4 cup
- Onion (finely chopped) – 1/2
- Freshly ground black pepper – taste
Instructions
- Begin by making sauté sauce in a medium saucepan with peanut oil. Throw in the finely chopped onion and allow it to cook until it becomes soft. Once done, add in the sambal oelek, ginger and garlic, and let all the ingredients cook for approximately 30 seconds to 1 minute.
- Now, add peanut butter, 3/4 cup of chicken broth, kecap manis, and dark brown sugar. Allow the sauce to cook for about 5 to 10 minutes. Make sure to add more broth if you find the mixture becoming too thick.
- After about 10 minutes, take the pan off the heat and transfer the ingredients to an airtight container. Refrigerate until it is ready to use.
- Next, take a large pot or fryer and add oil to it. Heat to 325°F. Peel and cut the potatoes into the shape of fries. Get rid of any extra starch from the fries by dipping them in cold water and patting them dry.
- Now it’s time to fry the potatoes. Carefully drop the fries in the hot oil. Remember to add potatoes in batches so that they don’t overcrowd. Allow them to fry for about 5 minutes until they are completely cooked. Transfer the fries from the oil to a towel-lined plate. Repeat the same process with the rest of the fries.
- Consume the fries immediately after adding the sauce, mayonnaise, and raw onion on top.
