Czech Buchty (Filled Buns) Recipe

Buchty are thought to have originated in the Bohemian region but are also beloved in Slovenian, Slovak, Hungarian, and Austrian cuisines. These Czech baked buns are made from a yeast dough filled with a sweet filling, then brushed with rum and melted butter for added richness.

Ingredients
  

For yeast dough:

  • All-purpose flour – 3 cups
  • Milk (lukewarm) – ¾ cup
  • Unsalted butter (melted) – ½ stick
  • Granulated sugar – ⅓ cup
  • Active dry yeast – 1 and ½ tsp
  • Egg – 1
  • Salt – ¼ tsp
  • Unsalted butter (melted) – ⅓ stick

Mixture for brushing the buns:

  • Unsalted butter melted – 2 tbsp
  • Rum Kirkland – 2 tbsp

Topping:

  • Powdered sugar – 2 tbsp

Filling:

  • Cream cheese, apricot jam, poppy seed – 1 cup

Instructions
 

  • Begin by taking some milk and warming it. Make sure it’s lukewarm and not completely hot. Now, take a cup and transfer ½ cup of milk to it. Add active dry yeast and a teaspoon of sugar and combine. Allow the mixture to rest in a warm place until you observe small bubbles forming on the surface. This might take around 10-15 minutes.
  • In the meantime, take some butter and melt it. Once done, allow it to cool down.
  • Now, take a large mixing bowl and throw in the flour, melted butter, sugar, the remaining of the lukewarm milk, an egg, and a pinch of salt. Pour some milk into the activated yeast.
  • It’s time to prepare the dough. Begin combining the ingredients using a fork. When combined, transfer the mass onto a clean work surface. Start kneading the dough. It should take you around 10 minutes. You can add a little more flour if the dough is sticky during processing.
  • Allow the prepared dough to rise in a warm place. In around one hour, you will notice it having doubled in size.
  • Next, separate the prepared dough into roughly equal-sized pieces. Take a kitchen scale and weigh every piece per bun to 85 grams. Roll every piece into a patty using a rolling pin.
  • Take a knife and divide the dough into squares about 4×4 inches in size. Put one tablespoon of filling in the centre of every square.
  • Fold the dough ends over the filling and seal properly. Lastly, carefully roll the prepared bun between your palms to obtain an even shape.
  • Take some butter and brush it over a baking dish. Now, take ⅓ stick of butter and melt it in a saucepan. Once done, keep it aside to cool. Grease the baking tray with it.
  • Place the buns in the baking dish. Make sure you do it one by one, seam-side down, brushing every side with cooled-down, melted butter. 
  • Keep the buns in a warm place for around 20 minutes until they rise a little more.
  • It’s time to bake in a preheated oven at 325°F for around 40 minutes.
  • Take two tablespoons of melted butter and add two tablespoons of rum to it. Combine both ingredients well. Once the buns are done, brush their surface with the freshly prepared butter-rum combination.
