Crispy Fried Onion Rings, Onion Dip

Crispy Fried Onion Rings are a classic snack or appetizer made by dipping thick onion slices into a seasoned batter and deep-frying them until golden and crunchy. They're light, crispy on the outside, and tender inside. The rings are typically served with a creamy, tangy onion dip made from caramelized onions, mayonnaise, sour cream, and herbs, enhancing the flavor. Ingredients
  

  • 6 nos Onions (large)
  • ¼ cup Flour (Maida) – for dusting

For Batter

  • ½ cup Flour (Maida)
  • ½ tsp Salt
  • 2 tsp Chilli Flakes
  • 2 tsp Oregano (dried)
  • ½ tsp Pepper Powder
  • Handful Coriander (chopped)
  • 1 tsp Garlic (chopped)
  • ¼ cup Water (approx.)
  • 2 cups Breadcrumbs (dried)
  • Oil – for deep frying

For Onion Dip

  • 1½ tbsp Butter
  • 1 no Bay Leaf
  • ⅓ cup Onion (chopped)
  • 2 nos Green Chillies (slit)
  • Salt to taste
  • 1 tsp Chilli Flakes
  • 1 tsp Oregano (dried)
  • ½ cup Mayonnaise (veg)
  • Handful Coriander (chopped)
  • ½ no Lemon

Instructions
 

Prepping Onions

  • Peel the onions and carefully cut the onion into thick roundels. Using your fingers push out from the centre of the onions to reveal the onion roundels or onion rings. Lightly dust them in dry flour and keep side.
  • For crispy fried onion rings, we will not be using the centre of the onions, in fact we will be making a fantastic roasted onion dip using these leftovers to serve with this dish. So roughly chop the leftovers of these onions and keep aside for the dip later.

For the Batter

  • Mix together flour, salt, chilli flakes, oregano, pepper powder, coriander, garlic and water. Make it into a thick batter. Adjust the quantity of water a bit if required.
    Whisk it nicely so that there are no lumps int he batters.

For Crumbing

  • Heat oil in a deep vessel or a kadai to medium hot. Dip the onion rings in the batter and then place it over the dried breadcrumbs. Press firmly to make sure the breadcrumbs stick to the onions. Now add the breaded onions to the hot oil and fry till golden brown and crispy. Remove to a plate with an absorbent paper to absorb excess oil. Repeat the same with the remaining onion rings. Serve hot.
  • There may be a chance that some of the batter will slip off the onions after coating them with breadcrumbs, in this case simply dip them again in the batter and crumb again and fry them

For Onion Dip

  • Melt butter in a hot pan, add bay leaf and then add onions, along with green chillies. Toss them together for 2 mins and sprinkle with salt. Add chilli flakes, dried oregano, and toss them together for 30secs. Remove to a bowl and let it cool completely.
  • Once cooled add mayonnaise, coriander chopped and lemon. Mix together and serve it with crispy fried onion rings.
