Classic Bellini Cocktail
In the late 1930s to early 1940s, at the renowned Harry's Bar in Venice, a popular haunt for expatriates such as Ernest Hemingway, Sinclair Lewis, and Orson Welles, Giuseppe Cipriani created the Bellini. The cocktail's fruity charm, inspired by the 15th-century Venetian artist Giovanni Bellini, is attributed to its name and hue. While it was originally made with Prosecco and white peach puree, using yellow peach puree or ready-made peach nectar and/or peach schnapps is perfectly acceptable. Enjoy it and bask in an air of sophistication!
Ingredients
- 2 fluid ounces peach juice
- 4 fluid ounces chilled sparkling wine
- 1 tablespoon raspberry juice
Instructions
- Pour peach juice into a champagne flute. Slowly pour sparkling wine over peach juice; let sit until liquids have blended, about 1 minute. Pour raspberry juice over champagne mixture.
