Chorizo, Red pepper and Manchego Tortilla Recipe
Enjoy a delightful Spanish tortilla featuring chorizo, potatoes, and manchego. This dish is made with crispy chorizo, crunchy red peppers, red onions, and tender slices of potatoes, all seasoned with manchego cheese, garlic, paprika, and parsley. It’s served alongside a fresh green salad.
Ingredients
Tortilla
- 1 whole bell pepper (red)
- black pepper (to taste)
- 75 grams chorizo
- 3 whole egg
- 3 sprig fresh parsley
- 2 cloves garlic
- 75 grams manchego cheese
- 2 whole baking potatoes
- 0.5 whole red onions
- salt (to taste)
- 0.5 tsp smoked paprika
- 1 tbsp olive oil
Salad
- 100 grams cherry tomatoes
- 0.5 whole cucumber
- 40 grams Salad leaves
Instructions
- slice the red onions thinly, wash and slice the peppers into strips, peel and thinly slice the potatoes, chop the chorizo into cubes, peel and crush the garlic using the garlic crusher or chop finely
- heat half the oil in the frying pan, add the onions, potatoes peppers and garlic to the frying pan, cook till potatoes are soft, Approx 15 mins
- wash mixed leaves and place in a serving bowl. place a cross on the top of the cucumber, then slice the cucumber to form quarters, sprinkle over the salad leaves, wash the cherry tomatoes and then slice in half, sprinkle over the salad leaves
- add the eggs to a small bowl and beat, add the paprika, season with salt and pepper, mix the ingredients
- grate the cheese, wash and finely chop the fresh parsley
- add the chorizo to the pan fry till crisp
- empty the contents of the frying pan into a bowl, add the eggs, cheese and parsley to the bowl
- heat the remaining oil in the frying pan, switch the grill on
- add the contents of the bowl to the frying pan, cook for 3 to 4 mins until the egg has set, remove the frying pan from the heat and place under the grill, cook till crisp and golden brown
- cut the tortilla into slices, serve immediately, with salad
