
Cherry Tomato and Olive Crostini
Cherry Tomato and Olive Crostini is a classic Italian appetizer featuring toasted bread slices topped with a fresh, zesty mix of cherry tomatoes, olives, garlic, and herbs. It’s light, flavorful, and perfect for parties or as a starter before meals.
Ingredients
- Focaccia slices – 6 nos
- Olives sliced – 1/2 cup
- Cherry tomato – 20 nos
- Parmesan cheese flaked – 1 cup
- pepper – to taste
- Extra virgin olive oil – 2 tbl spn
- Garlic chopped – 1 tsp
- Basil leaves – few nos
- salt – to taste
Instructions
- Slice the cherry tomato. Chop up the basil leaves. In a bowl combine olives, chopped garlic, basil leaves and olive oil.
- Toast the bread till crisp. Remove and spoon the olive and tomato topping on this crisp bread. Sprinkle parmesan cheese.
