Ingredients
For Cabbage Mixture
- Cabbage, large (पत्ता गोभी) – 1 no
- Onion, chopped (प्याज़) – ½ cup
- Capsicum, chopped (शिमला मिर्च) – ½ cup
- Carrot, grated (गाजर) – 1 cup
- Salt (नमक) – to taste
- Black Salt (काला नमक) – ½ tsp
- Chilli Powder (मिर्ची पाउडर) – 2 tsp
- Coriander Powder (धनिया पाउडर) – 1 tbsp
- Cumin Powder (जीरा पाउडर) – 1 tsp
- Garam Masala (गरम मसाला) – ½ tsp
- Chaat Masala (चाट मसाला) – 1 tbsp
- Kasoori Methi (कसूरी मेथी) – a large pinch
- Green Chilli, chopped (हरि मिर्च) – 2 nos
- Ajwain (अजवाइन) – ½ tsp
- Coriander, chopped (ताज़ा धनिया) – handful
- Besan (बेसन) – 1 cup
- Semolina (सूजी) – ¼ cup
- Baking Soda (बैकिंग सोडा) – ½ tsp
- Water (पानी) – ¼ cup/60 ml
- Oil (तेल) – for frying
For Chutney
- Tamarind Water (इमली पानी) – ½ cup
- Coriander Leaves (ताज़ा धनिया)- ½ bunch
- Mint Leaves (पुदीना पत्ता) – 1 cup
- Ginger, sliced (अदरक) – ½ inch
- Garlic Cloves (लहसुन) – 6 nos
- Green Chilli (हरि मिर्च) – 2 nos
- Salt (नमक) – to taste
- Black Salt (काला नमक) – ½ tsp
- Chaat Masala (चाट मसाला) – 2 tsp
- Roasted Cumin (भुना जीरा) – 2 tsp
- Onion, small (प्याज़) – 1 no
Instructions
- For Patta Gobhi Ka Nasta, shred the cabbage finely and squeeze out any excess water.In a large mixing bowl, combine shredded cabbage, chopped onion, capsicum, grated carrot, and all the spices – salt, black salt, chili powder, coriander powder, cumin powder, garam masala, chaat masala, kasoori Methi, chopped green chili, ajwain, and fresh coriander.Add besan and sooji to the mixture. Add a pinch of baking soda. Mix thoroughly. The veggies will release their moisture.Heat a tawa on medium flame. Spread a little oil on the surface. Take a small portion of the mixture and shape it into a disc. Place it on the heated tawa.
- Cook until the bottom side turns golden brown, then flip and cook the other side until crisp and golden. Repeat the process for the remaining mixture, adding oil to the tawa as needed.Once both sides are cooked and the discs are crispy, remove from the tawa and place them on a plate. Serve the tawa-fried cabbage discs hot with your favorite sauce or chutney.
- For Imli Pudina chutney, in a blender, combine tamarind water coriander leaves, mint leaves, sliced ginger, garlic cloves, green chilies, salt, black salt, chaat masala, roasted cumin, and onion.Blend the ingredients into a smooth paste. You can add a little water if needed. Transfer the chutney to a serving bowl. Enjoy this Imli Pudina Chutney with snacks, chaat, or as a side with your favorite meals.
