Broccoli and Bacon Salad with Creamy Dressing
Broccoli and Bacon Salad with Creamy Dressing is a delicious and hearty side dish, combining crunchy broccoli, crispy bacon, and a rich, creamy dressing. Ingredients
- 150g Coles Australian Made Thin Sliced Streaky Bacon
- 800g broccoli, cut into small florets
- 125g (1/2 cup) whole-egg mayonnaise
- 1 tbsp fresh lemon juice
- 2 tsp wholegrain mustard
- 1 tsp Dijon mustard
- 200g red grapes, halved
- 2 green shallots, thinly sliced
- 2 tbsp slivered almonds, toasted
Instructions
- Place the bacon in a large frying pan. Heat over medium-high heat. Cook, turning once, for 4-5 minutes or until golden and crisp. Remove from pan. Coarsely chop.
- Meanwhile, bring a saucepan of water to the boil over high heat. Add the broccoli. Cook for 3 minutes or until bright green and tender crisp. Drain. Refresh under cold water. Drain.
- Combine the mayonnaise, lemon juice and mustards in a small bowl.
Notes
Can you eat broccoli raw in a salad?
- Yes, in fact raw broccoli in a salad is a popular twist. We lightly blanch the broccoli and then add to chilled water to lock in the colour. If you want to skip this step, just make sure you make the salad a couple of hours in advance to allow the dressing to soften the florets and add the crispy bacon just before serving.
- Don’t get rid of the broccoli stalks. Instead, trim off the woody end and discard, then thinly slice the stalk into matchsticks. They can now be tossed through salad for a textural difference or reserved to use in stir-fries.
- We use streaky bacon which comes from the pig’s belly. This is the fattiest cut, which means it becomes super crisp when fried. You could use a shortcut, which is the leanest type of bacon, or middle cut, which is somewhere in between.
