Blueberry Peach Feta Salad

Ingredients
- 1/2 c. white balsamic vinegar
- 2 tsp. finely grated lemon zest
- 1 tsp. Dijon mustard
- 1/2 tsp. kosher salt
- 1 c. extra-virgin olive oil
- 1/2 c. finely chopped shallot
- 4 medium yellow peaches, halved lengthwise, sliced 1/4" thick
- 4 small mini cucumbers, sliced 1/4" thick
- 2 c. fresh blueberries
- 2 tbsp. thinly sliced fresh basil
- 3/4 c. crumbled feta
Instructions
- In a large bowl, whisk vinegar, lemon zest, mustard, and salt. While whisking, slowly pour in oil until smooth and emulsified. Add shallots and whisk to combine.
- Add peaches, cucumbers, blueberries, and basil and toss to combine. Top with feta.
