Ingredients
- 250 gms pork chop
- 2 gms pink pepper corn
- 2 gms green pepper corn
- 2 ml aromatic sauce
- 3 gms salt
- 1 gms black pepper
- 15 gms salted butter
- 10 ml refined oil
- 50 gms red cabbage
- 25 gms bell pepper chop
- 25 gms apricot
- 25 gms onion
- 5 ml red wine
- 1 gms ancho chilli
- 1 gms cayenne pepper
- 0.5 gms microgreen
Instructions
- Take pork chop, marinate it with aromatic sauce, cayenne pepper, black pepper, pink pepper, green pepper, chopped garlic, salt, pepper and refined oil.
- Heat the griller, add oil to it and grill pork chop from both end and finish cooking in the oven at desired temperature.
- Take a frying pan, add oil to it, put garlic, leeks, celery and bell pepper. Chop, saute and then add black rice, season with salt and black pepper.
- For apricot sauce, take apricots, onion, salt, pepper, ancho chili (a large variety of chilly that is often used in Mexican cuisine), red wine and make a smooth puree in the grinder, Cook for 5 minutes in a frying pan on medium heat.
- Serve the pork chop hot with black rice and apricot sauce. Garnish with micro greens.
