I have specifically used purple brinjals in this recipe, but you can choose any variety of brinjal you prefer. Just ensure that the brinjals are tender for optimal taste. Also, feel free to adjust the levels of salt, jaggery, and tamarind to suit your personal taste preferences.
Ingredients
- 1/4 kg brinjal
- 1/4 tsp turmeric powder
- 1/2 – 1 tsp red chilli powder
- 1 tsp jaggery
- 1 big marble sized tamarind
- 1 onion
- 2 tbsp chopped coriander leaves
- Salt as per your taste
- 1tbsp ghee (or oil)
Instructions
- Chop the brinjals and soak them in water for 10 minutes.
- Heat ghee (or oil) in a pan.
- Add in soaked brinjals.
- Add in salt and turmeric powder. Give a quick mix.
- Close the lid and cook until brinjals are soft.
- Add in red chilli powder.
- Add in tamarind juice.
- Add in jaggery.
- Give a good mix and switch off the stove. Wait until warm or cool.
- Once warm (or cool), add in chopped onion and coriander leaves.
- Mash it well. Serve it with hot rice or chapati.
