Bacon-Wrapped Scallops with Chili Butter
I made these beautiful, delicious bites before Christmas, and it’s taken me this long to recover from the bliss so I can finally share them with you. I’ve always enjoyed bacon-wrapped scallops, but this batch turned out especially amazing for some reason. Maybe it was the holiday spirit making everything taste better, or perhaps the scallops were extra fresh, and the bacon was perfectly crisp and flavorful. It could also have been the drizzle of melted chili butter I added, which made me weak in the knees and devour far too many of them. Or maybe I just really love food and tend to get carried away when it’s this good. Either way, these are absolutely delicious!
Ingredients
- 2 lb. large scallops
- 1/2 lb. bacon, cut into thirds or halves
- 1 stick butter
