Apple, Raisin, and Carrot Slaw

Ingredients
- 1/3 cup yogurt (such as Icelandic Skyr)
- 1/3 cup light mayonnaise
- 1 1/2 tablespoons cider vinegar
- 1 tablespoon poppy seeds
- 1 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 5 cups chopped or shredded cabbage
- 1/3 cup julienned carrot
- 2 cups unpeeled diced red apple
- 1/2 cup golden raisins
- fresh parsley, for garnish
Instructions
- Whisk together yogurt, mayonnaise, vinegar, poppy seeds, mustard, salt, and pepper in a large bowl. Stir in cabbage, carrot, apple, and raisins. Garnish with fresh parsley.
