If you have a fondness for French macarons, you might find this twist on Italian amaretti cookies appealing. These cookies are soft, fluffy, moist, sweet, and delicately flavored with amaretto liqueur and citrus zests. They hold a special place among my top 10 favorite cookies of all time.
During my travels in Spain, I discovered numerous almond-based cookies, and I delighted in seeking out cookies painstakingly crafted by nuns hidden away in convent corners. These amaretti cookies belong to the same cookie family: aromatic, subtly nutty, decadent yet heavenly.
For an added crispy texture in every bite, you can roll them in granulated sugar before baking, but they are equally enjoyable when left plain. Either way, let these cookies grace your lips during the holiday season. Allowing the dough to rest for 2 hours in the refrigerator will result in a denser cookie. This resting period allows the almond flour to absorb the flavors and moisture, resulting in enhanced taste and texture.

Ingredients
  

  • 2/3 c. granulated sugar (140 g.), plus more for rolling
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 1/2 c. almond flour (165 g.)
  • 2 large egg whites
  • 1 tsp. almond extract
  • 1 tsp. amaretto liqueur  
  • 1/4 tsp. orange blossom water (optional)

Instructions
 

  • In a medium bowl, rub together sugar and zests using your fingertips until sugar turns a pale orange shade. Whisk in almond flour until well combined.
  • In a large bowl using a hand mixer, beat egg whites until medium peaks form. Add in almond extract, amaretto, orange blossom water (if using), and almond flour mixture and fold to combine. Store dough in an airtight container for at least 2 hours, up to overnight.
  • When ready to bake, preheat oven to 325°. Line a baking sheet with parchment.
  • Portion dough into balls about 1 tablespoonful each. Roll in more granulated sugar before placing on prepared sheet 2" apart.
  • Bake until bottoms are lightly golden, about 23 to 25 minutes.
