Ingredients
  

  • 4 tsp cooking oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tsp gram dal or chana dal
  • 1 tsp urad dal
  • 1/4 tsp turmeric powder
  • A big pinch of asafoetida
  • 1cm length ginger
  • 3 cloves garlic
  • 4 – 5 curry leaves
  • 1 – 2 green chili
  • 1 big onion
  • 1 small carrot
  • 1 tomato
  • 2 medium sized potato
  • 2 tsp gram flour or besan
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 2 tbsp coriander leaves
  • Salt as per your taste

Instructions
 

  • Cook, peel and mash the potatoes. Chop onion and tomato. Grate the carrot. Mince ginger and garlic.
  • Take 4 tsp of oil in a wok or frying pan and heat it. Now prepare tempering using mustard seeds, cumin seeds, urad dal and gram dal.
  • Add in slit green chilies, curry leaves, minced ginger, minced garlic, asafoetida and turmeric powder.
  • Add in chopped onions and fry until soft.
  • Add in chopped carrot and fry until soft.
  • Add in chopped tomatoes and fry until soft.
  • Add in mashed potatoes.
  • Take gram flour, coriander powder, cumin powder and salt in a bowl. Add in a cup of water and give a quick mix.
  • Add this spice and gram flour water and give a quick mix.
  • Bring it to boil and continue boiling for 5 minutes. Garnish with coriander leaves. Serve it with dosa or poori or chapathi.
