Ingredients
  

  • 1 cup cauliflower florets or gobi or hookosu
  • 1/2 cup chopped potato
  • 1/2 cup fresh green peas (can be replaced with potato)
  • 1/2 tsp jeera or cumin seeds
  • 1 tsp red chili powder
  • 1/4 tsp garam masala
  • 1 tsp coriander or dhaniya powder
  • 1/4 tsp turmeric powder
  • 1 tbsp finely chopped coriander leaves
  • 1 tbsp kasuri methi or dried methi leaves (optional)
  • 2 tbsp cooking oil
  • Salt as per your taste

Ingredients for grinding:

  • 3 – 4 cloves garlic
  • 1cm length ginger
  • 1 onion chopped
  • 1 big tomato chopped

Instructions
 

  • Rinse and blanch cauliflower florets for 2 minutes in boiling water along with little salt.
  • Grind ginger, garlic, onion and tomato into a fine paste using mixer grinder.
  • Now in a deep frying pan heat 2 tbsp oil and add in 1/2 tsp cumin seeds.
  • When the cumin seed splutters add in ground onion+tomato+giner+garic paste. Fry for 2 minutes.
  • Add in dry spice powders like red chili powder, coriander powder, turmeric powder and garam masala powder. Give a quick mix.
  • Next add in blanched cauliflower florets, chopped potato and fresh green peas. Give a quick mix.
  • Add a cup of water, salt and bring it to boil.
  • Close the lid and allow it to cook under low flame.
  • After around 10 minutes or when the vegetables are cooked and soft, add in kasoori methi and cook for 2 more minutes.
  • At the end sprinkle coriander leaves and switch off the stove. Serve it with roti or chapathi.
