Air Fryer Cinnamon Crunch Granola
Is there anything an air fryer can't do? It can whip up fluffy oat pancakes, create a crispy chicken sandwich using only a fraction of the usual amount of oil, bake mouthwatering peanut butter and chocolate cookies, and, best of all, produce the crunchiest granola you've ever tasted. The secret lies in the air fryer's ability to circulate high-powered hot air around the food it cooks, resulting in a crispy texture rather than a soggy one. This holds true for our Cinnamon Crunch Granola recipe, packed with pecans, pumpkin seeds, and coconut. Feel free to experiment with different nuts and seeds depending on what you have available, as long as the dry ingredients add up to a total of 3 1/4 cups.
Ingredients
- 1/3 c. packed light brown sugar
- 1/4 c. extra-virgin olive oil
- 1 tbsp. ground cinnamon
- 2 tsp. pure vanilla extract
- 1/4 tsp. kosher salt
- 1 1/2 c. old-fashioned rolled oats
- 1/2 c. raw pecans, roughly chopped
- 1/2 c. raw pumpkin seeds (pepitas)
- 1/2 c. unsweetened coconut flakes
- 1/4 c. raw sunflower seeds
- Fresh berries and yogurt, for serving (optional)
Instructions
- In a large bowl, combine brown sugar, oil, cinnamon, vanilla, and salt. Add oats, pecans, pumpkin seeds, coconut, and sunflower seeds and toss to combine.
- Line an air-fryer basket with foil, coming 1" up the sides to create a foil basket. Add one-third to one-half of oat mixture (depending on size of air fryer). Cook at 350°, stirring halfway through, until golden and crispy, 6 to 9 minutes.
- Transfer to a large heatproof bowl and let cool. Repeat with remaining oat mixture.Serve with berries and yogurt, if desired.
