Ingredients
  

  • Mustard Oil (सरसों तेल) – 4 tbsp
  • Bayleaf (तेज पत्ता) – 1no
  • Nigella seeds (कलोनजी) – 1 tsp
  • Fennel seeds (सौंफ) – 2 tsp
  • Mustard seeds (राई) – 2 tsp
  • Fenugreek seeds (मेथी) – ½ tsp
  • Cumin (जीरा) – 2 tsp 
  • Onion chopped (प्याज़) – 250gms/1 ¼ cup
  • Ginger chop (अदरक) – 1 tbsp
  • Garlic chopped (लहसुन) – 1 tbsp
  • Green chilli (हरी मिर्च) – 2 nos
  • Turmeric (हल्दी) – 1 tsp
  • Kashmiri chilli powder (कश्मीरी मिर्च) – 1 tbsp 
  • Coriander powder (धनिया) – 2 tbsp
  • Cumin powder (जीरा) – 1 tsp
  • Water (पानी) – ½ cup
  • Tomato (टमाटर) – 600gms/3 cups
  • Cashew nuts (काजू) – ¼ cup/ 30 gms
  • Water (पानी) – 2 cups
  • Red chilli pickle (लाल मिर्च अचार) – 1 tbsp 
  • Mixed Pickle (मिक्स अचार) – 1 tbsp 
  • Paneer (पनीर) – 400 gms
  • Kasoori Methi (कसूरी मेथी) – ½ tsp 
  • Coriander chopped (धनिया) – handful

Instructions
 

  • In a pan, add some mustard oil and heat it well, then add bay leaf, nigella seeds, fennel seeds, mustard seeds, fenugreek seeds and cumin seeds. Now add chopped onions and cook it till it turns golden brown. Add garlic, ginger and green chillies to the roasted onions and stir it.
  • Add turmeric powder, red chilli powder, coriander powder and cumin powder. Give it a stir and add a little bit of water.Now in a mixer grinder jar, add tomatoes and some cashew nuts. Grind it into a puree.Strain the puree and pour it into the pan. Now cover the pan with a lid and cook for 10 to 15 minutes.Now into the roasted masala, add some water and stir it. Chop the mixed pickle and red chilli pickle finely and add it to the masala.
    Now cut the paneer and add it to the masala. Then add Kasoori Methi and stir it. Achari Paneer masala is ready. Enjoy it hot!
