This delectable sweet-savory tofu marinade features common pantry staples and offers a delightful BBQ-like flavor with a spicy kick. ???? It works wonders for baked, grilled, or pan-fried tofu, making it an excellent foundation for any of your preferred tofu dinners.
Properly prepping your tofu before marinating is crucial to ensure it absorbs the flavors perfectly. To achieve this, we opt for extra firm tofu, aiming to remove as much moisture as possible. The best method is to freeze the tofu until it becomes solid, then defrost it, and gently squeeze out the remaining liquid. (For more details, refer to June's Baked Tofu recipe.) If you're short on time, you can also press or squeeze out as much liquid as possible before marinating.
As for cutting the tofu, feel free to get creative! Whether you prefer smaller cubes or other shapes, using a resealable bag for marinating is recommended as it allows easy flipping to ensure the marinade is evenly absorbed.

Ingredients
  

  • 3 tbsp. reduced-sodium soy sauce 
  • 1 tbsp. sriracha
  • 1 tbsp. toasted sesame oil
  • 1 tsp. extra-virgin olive oil
  • 2 tbsp. pure maple syrup
  • 2 tsp. smoked paprika
  • 1 tsp. five-spice powder
  • 2 cloves garlic, minced or grated
  • 1 (14-oz.) block extra firm tofu, prepped and cut as desired

Instructions
 

  • In a medium bowl, whisk together all ingredients except tofu. Place tofu in an even layer in a baking dish, or in a resealable plastic bag. Pour marinade over tofu.
  • Marinate in the refrigerator for 30 minutes or up to 1 day, turning occasionally. Prepare as desired.
