Ingredients
  

  • 6 large Medjool dates, pits removed
  • 1/2 c. almond butter
  • 1/2 c. old-fashioned oats
  • 1/2 c. raw unroasted cashew
  • 1/4 c. coconut oil
  • 1 1/2 tsp. pure vanilla extract
  • 2 tsp. ground cinnamon, divided
  • 1/2 tsp. kosher salt, plus more
  • 2 tbsp. coconut flour
  • 2 tbsp. coconut sugar

Instructions
 

  • In a food processor, pulse dates, butter, oats, cashews, oil, vanilla, 1 1/2 teaspoons cinnamon, and 1/2 teaspoon salt until combined and a sticky dough forms, 1 to 2 minutes. 
  • Line a baking sheet with parchment. Using a 1 1/2-tablespoon cookie scoop or a tablespoon measuring spoon, scoop mixture and roll into balls. (If mixture is too sticky to handle, refrigerate until firm enough to roll.) Arrange balls on prepared baking sheet.
  • In a medium bowl, combine flour, coconut sugar, a pinch of salt, and remaining 1/2 teaspoon cinnamon. Roll balls in flour mixture and return to baking sheet. Refrigerate until chilled, about 30 minutes.
