Chia Pudding

While chia seeds may initially appear daunting, they are actually incredibly simple to transform into a delectable and customizable breakfast. Not only do these seeds offer numerous health benefits, but when combined with milk and chilled, they effortlessly become a delightful, creamy pudding with just 5 minutes of preparation. Your refrigerator takes care of the rest: Retrieve it in the morning, embellish it with your preferred toppings, and savor it as a nutritious breakfast, a revitalizing snack, or a refreshing summer indulgence.
Ingredients
- 1 c. almond milk or milk of your choice
- 1/4 c. chia seeds
- 1 tbsp. pure maple syrup, honey, or agave nectar
- 1 tsp. pure vanilla extract (optional)
- Pinch of kosher salt
- Sliced fruit, granola, jam, and/or nuts, for serving
Instructions
- In a medium bowl, whisk milk, chia seeds, maple syrup, vanilla (if using), and salt.
- Cover and refrigerate until thickened, at least 2 hours or up to overnight.
- Serve with mix-ins and toppings of your choice.
