
Chicken Porcupine
Chicken Porcupine is a comforting dish made with tender chicken meatballs mixed with rice, simmered in a flavorful tomato-based sauce. As the rice cooks, it sticks out like little "porcupine quills," giving the dish its unique name and texture.
Ingredients
- 250 gm chicken mince
- 3 tbsp carrots, finely chopped
- 1 tbsp soya sauce
- 1 tsp sesame oil
- 1 egg
- Salt to taste
- 1 tbsp garlic, chopped
- 3 tbsp spring onions, finely chopped 1 tbsp ginger, finely chopped
- 1 tbsp oyster sauce
- 1 tsp pepper powder
- 1⁄2 cup rice (small, thin grain) Oil for greasing
Instructions
- Wash and soak the rice for 2 hours. Drain the water and keep aside. Place the chicken mince in a bowl. Mix all the ingredients well and divide it into equal-sized balls.
- Roll these balls in the soaked raw rice and carefully place these small porcupines on a greased plate. Get the steamer ready and steam these on high heat for 15 minutes.
- Remove and serve these cute chicken porcupines with soy sauce on the side.
