
Veg Masala Pulao
Veg Masala Pulao is a fragrant and mildly spiced Indian rice dish made with basmati rice, assorted vegetables, and a blend of aromatic spices. It is a one-pot meal that combines the richness of masalas with the freshness of vegetables, making it a wholesome and flavorful option. Often served with raita, salad, or pickle, it is a popular choice for lunch, dinner, and festive occasions.
Ingredients
- 2cups Basmati rice (soaked)
- 4-5 tbsp Oil
- 2 no Black cardamom
- 1tsp Roasted Cumin Powder
- 1-2no Bayleaf
- 6-8nos Peppercorn
- 3-4 nos Cardamom
- 4-5 nos Cloves
- Small piece Cinnamon
- 2 small nos Pather Phool
- 1cup Onion sliced
- 1tbsp Ginger chopped
- 1tbsp Garlic chopped
- slit – 2-3nos Green chillies
- 1 tsp Turmeric
- 1½ tbsp Coriander powder
- 1tsp Chilli powder
- 1 cup Tomatoes chopped
- ½ cup Beans (Diced)
- ½ cup Carrot diced
- 12nos Potato wedges
- ½ cup Green Peas
- 2 tsp Kasoori Methi (dried)
- 3½ – 4cups Water
- for garnish Coriander chopped
Instructions
- Wash and soak rice for 30mins
- Heat oil and add whole spices. Add onions and brown them, add chopped ginger, garlic and green chilli. Saute and add dash of water. Add powdered spices and saute. Add tomatoes and salt and cook for 3-4 mins. Now add the veggies and Methi leaves.
- Cook for 2 mins and then add water and bring to a boil (let the veggies be raw).
- Drain the water from rice and add it to the pan. Mix and cover and cook till rice is cooked and water is absorbed.
- Remove to a platter and garnish with coriander leaves.
