
Eggless Tutti Frutti Cake
Eggless Tutti Frutti Cake is a soft, moist, and fluffy tea-time cake made without eggs. It is flavored with vanilla and packed with colorful tutti Frutti (candied fruits), which add a delightful sweetness and festive look. This cake is made using basic pantry ingredients like all-purpose flour, yogurt or curd, sugar, and oil or butter, making it ideal for vegetarians. Perfect for snacks, celebrations, or gifting during holidays.
Ingredients
- (fine grain) – 2 ¼ cup Sugar
- 3½ tbsp Honey
- 2tsp Vanilla extract
- 1¼ cup Oil
- 1 cup Candied fruits
- ½ cup Dry fruits (chopped)
- ½ tbsp Baking Soda
- 1½ cup Milk
- 1tbsp Baking Powder
- 4½ cup Flour (Maida)
- for garnish Icing Sugar
- few Cherries
- few Mints leaves
Instructions
- Whisk together sugar, honey, vanilla and oil for 3mins on medium speed.Add candied fruits, dry fruits, baking powder, baking soda and milk. Mix together and then slowly fold in the flour.
- Line a round mould (6inch did and 2inch tall). Line it with a butter paper. For the batter into it. Place the mould in a pre-heated oven at 160c for 40mins approx.
- Once the cake is ready remove and cool it for 10 mins in the mould. Now upturn the mould on to a wire rack and remove the cake from the mould. Allow it to cool completely. Garnish with icing sugar, cherries and mint leaves and serve.
