Ingredients
  

🔥 For Boiling Corn

  • 4 cups corn nibblets
  • 2 cups milk
  • 2 cups water
  • 1 tsp salt
  • ½ tsp pepper powder

🥣 For Salad Dressing (Amchoor Chutney)

  • ½ cup amchoor (dry mango powder)
  • 1 cup + 1 litre water
  • 2 tsp Kashmiri chilli powder
  • ¾ tsp black salt
  • Salt to taste
  • 1 cup sugar
  • 2 tbsp roasted cumin powder

🥗 For Salad

  • ½ cup red capsicum, chopped
  • ½ cup onion, chopped
  • ½ cup spring onion, chopped
  • ½ cup cucumber, sliced
  • ½ cup tomato, sliced
  • Salt to taste
  • 2 tsp chaat masala
  • 2 cups salad leaves, chopped
  • ½ cup salad dressing (prepared above)
  • Juice of 1 lemon

Instructions
 

  • In a pan add the corn nibbles, milk, water, salt and pepper. Bring it to a boil and then let it cook on medium heat for 5mins. After 5mins, remove from heat strain and keep the corn aside. Don’t throw away the strained milk as it can be used to cook rice, pulao or even knead dough for roti.
  • Let the corn cool completely.
  • In the meantime, mix 1 cup of water into the amachur powder and stir to avoid any lumps. In a fresh pan add 1 lt of water and mix the amchoor paste in it. Sprinkle chilli powder, black salt, salt, sugar and roasted cumin. Bring to a boil and them cook till the chutney thickens up where it is thick but pouring. Remove and cool it completely.
  • To assemble the corn chaat salad simply add the corn into a bowl, add onions, capsicum, spring onions, cucumber, tomato, salt, chaat masala, salad lead, salad dressing (amchoor chutney) and squeeze a small lemon. Toss them together and serve.
