Rava Laddu | Suji ke Ladoo

Rava Laddu, also known as Suji ke Ladoo, is a popular Indian sweet made from semolina (rava/suji), ghee, sugar, and flavored with cardamom. Ingredients
  

For Ladoo Mixture 

  • Ghee (घी) – 4 tbsp
  • Semolina (सूजी) – 1¼ cup or 250 gms
  • Sugar (चीनी) – 1 cup or 200 gms
  • Cardamom (हरि ईलाइची)- 4-5 nos
  • Desiccated Coconut (सूखा नारियल बुरादा) – 4 tbsp
  • Milk (दूध) – ¾ cup
  • Rose water (गुलाब जल) – 2 tsp (optional) 

For Dry Fruits

  • Ghee (घी) – 1 tbsp
  • Almonds (बादाम) – 12 nos
  • Raisins (किशमिश) – 12 nos
  • Pista (पिस्ता) – 12 nos
  • Cashew Nuts (काजू) – 12 nos
  • Dried Rose Petals (सूखी गुलाब पंखुड़ी) – handful
  • Almonds (बादाम) – 6 nos

Instructions
 

  • For simple rava ladoo, in a hot pan, melt some ghee, drop in semolina, and roast it till tills off white or light brown. The texture should be sandy.
    Blend sugar and cardamom into a fine powder. Add this powdered sugar to the pan. Add desiccated coconut. To speed up the process, pour milk and rose water. The sugar will release its moisture, and the consistency should be tight. Turn the gas off and cool it down to room temperature.
  • Heat a pan and melt some ghee. Now add chopped almonds, pistachios, and cashew nuts. Roast them all a little. Cool it down and add the dry fruits to the rava along with raisins. Mix it well together. Use your hands to knead it and soften it.
    Shape the mixture into balls just like ladoo. Top them up with almonds and the Rava ladoo is ready to be enjoyed.
