Roasted Apple Salad with Spicy Maple-Cider Vinaigrette
The Roasted Apple Salad with Spicy Maple-Cider Vinaigrette is a vibrant and flavorful dish that combines roasted apples, mixed greens, crumbled cheese (like feta or goat cheese), nuts, and dried cranberries. The salad is dressed with a tangy, sweet, and spicy vinaigrette made from apple cider vinegar, maple syrup, Dijon mustard, and a touch of chili flakes or cayenne pepper. The roasted apples add warmth and sweetness, while the spicy vinaigrette provides a bold contrast. This salad works well as a side dish, starter, or light main course, particularly in autumn or fall menus.
